This One Pan Chicken, Broccoli, and Sweet Potato Dinner brings together juicy, seasoned chicken, tender broccoli, and naturally sweet roasted sweet potatoes—all cooked on a single pan for minimal cleanup! Ingredients

Equipment
  • Sheet pan
  • 2 pieces of parchment paper (optional, easier clean up)
  • Large bowl with cover (don't worry if you don't have a cover)
  • Basting brush
Veggies
  • 3 medium sweet potatoes
  • 2-3 heads of broccoli (depends on the size)
  • 6 tablespoons extra virgin olive oil (divided in half)
  • 2 teaspoons (divided in half) of thyme, basil, parsley, onion powder, and garlic powder.
  • 1/2 teaspoon (divided in half) of paprika, salt, and pepper.
Chicken
  • 2lbs of chicken breast
  • Any spices or spice mixture you prefer
Sauce
  • 1/2 cup BBQ sauce
  • 1 1/2 teaspoon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon honey

Instructions

  1. Pre-heat oven to 400 degrees F
  2. In a medium bowl add sweet potatoes and 3 Tbsps. of the olive oil. Shake or mix.
  3. Add the spices and shake to mix.
  4. Put the 2 pieces of parchment paper on sheet pan and dump sweet potatoes on. Spread potatoes out on pan for even cooking.
  5. Cook for 30 mins and check to see if they’re done. You may need to put back in for another 15mins depends on thickness of the potatoes.
  6. While potatoes are cooking add broccoli to the bowl, add the remaining olive oil, and shake or mix.
  7. Add the spices and shake. Put aside.
  8. In a small bowl combine the BBQ sauce, honey, mustard, and garlic. Mix and put aside.
  9. Spice your chicken on both sides with your favorite spices.
  10. Once the potatoes are out of the oven add your chicken and baste both sides with the sauce.
  11. Add the broccoli to the middle and cook for 30 minutes (It will look like a lot but this will cook down.)
  12. After 30 minutes flip chicken over and baste other side. Toss the sweet potatoes and broccoli. Cook for an additional 30 minutes.
  13. Take out of oven and shred chicken. Baste broccoli and sweet potatoes with BBQ sauce and then pour the rest over chicken. Mix and cook for another 10 minutes.
  14. Take out and mix one more time and put in oven for a final 10 minutes.
  15. Serve and enjoy!
